Being gluten free is not easy. Whether you have had an intolerance imposed upon you by Mother Nature, or you simply don’t like what gluten does to your body, avoiding the substance is a challenge. Eating out in restaurants is becoming easier but there are still entire menus out there with nothing suitable for a Celiac. Dining at a friend’s house causes all kinds of problems and even cooking for yourself can pose issues.
But, keeping gluten out of your diet doesn’t have to make you miserable. Sure, you may face some obstacles, but none are insurmountable. All it takes is a solid arsenal of fool-proof gluten-free recipes stored in the back of your mind. So ditch your boring gluten-free pasta and sauce and get ready for some mouth-watering meals that won’t wreak havoc on your body.
This might not be the most attractive meal but it taste fantastic and it is really good for you. Chop up onions, garlic, courgette, carrots, and mushrooms and let them soften in a crockpot. Once they are soft, throw in some chopped tomatoes and season with a dash of paprika. If you want some protein, you can chuck some butter beans in there – or any kind of bean for that matter. Alternatively throw in some meat – sausages work particularly well. Simmer until everything is soft but not mushy and serve it piping hot.
Baked Salmon With Lentils and Veggies
This recipe couldn’t be easier and it can all be done in one pan so your washing up will be minimal. First throw lentils and quinoa into a casserole dish with some broth and bake for around 45 minutes. When the time is up, remove from the oven and fluff up your grains with a fork. Next, add your salmon and any veggies you choose on top, drizzled with lemon and olive. I like to add asparagus but you can get creative. Bake for another ten minutes. If your quinoa and lentils need some sauce, mix up some lemon, garlic, salt and olive oil and pour on top.
Baked Sweet Potato and Turmeric Falafel
Making these delightful little falafel balls will take a mere 15-20 minutes so you don’t need to wait long before digging in. Start by blending up a baked sweet potato for ten seconds in a food processor. Once the sweet potato is nicely broken up, add in a can of chickpeas, two cloves of garlic, cumin, coriander, turmeric, and a pinch of sea salt. Keep blending for another 15 seconds but stop before the chickpeas are completely pulverised. There should still be chunks of chickpea in the mixture. Finally, roll the mixture into little balls and bake until golden and crispy. Serve with salad.
Honey Garlic Chicken With Sweet Potato
Again, this recipe is super easy and has minimal clean up at the end. Place chunks of sweet potato in a roasting dish and drizzle with olive oil. Now, push them to the side of the dish and add chicken breasts. Next, brush the chicken with a mixture of butter, honey, mustard, garlic, oregano and chives. Make sure you brush both sides. Pop the tray into the oven until the chicken has around ten minutes left to go. Then, throw some broccoli on top and let that cook for the remaining ten minutes.
